Materials

For the roll
1 kg of ground beef
1 tbsp. cumin
1 tbsp. ground dried coriander
100 gr. ground toast
2 tbsp. dried oregano
2 tbsp. mustard
2 large eggs
The leaves of ½ sprig of fresh rosemary
3 packages X 25 gr. frozen freshly squeezed Papafilippou lemon juice
Salt Pepper
2 balls of fresh mozzarella, cut in half
For the tomato sauce
1 teaspoon olive oil
1 tablespoon chopped onion
Or a teaspoon of boukovo
1 teaspoon smoked paprika
Salt Pepper
1 can x 400 gr. crushed tomatoes
2 tbsp. Worcestershire sauce
1 package X 25 gr. Frozen freshly squeezed Papafilippou lemon juice

Implementation

Preheat the oven to 200 ° C.
2. In a bowl, add the minced meat, onion, cumin, coriander, ground breadcrumbs, oregano, mustard, eggs, rosemary, lemon juice, salt and pepper. Knead lightly.
3. Transfer half of the meat mixture to a pyrex and then shape it into a rectangular piece. Place the mozzarella pieces in the center of the minced meat in a row. Cover with the rest of the minced meat and give a nice shape.
4. Put in the oven and cook for 40 minutes.
5. Meanwhile, make the sauce. Put a medium saucepan over medium-high heat, heat the oil and fry the onion for 1 minute. Add the boukovo, paprika, salt, pepper, tomatoes, Worcestershire sauce and lemon. Let the mixture simmer for 1 minute. Lower the heat and simmer for 10 minutes.
6. When the time for the roll has passed, remove from the pan from the oven and pour over the tomato sauce. Put the pan back in the oven for 10 to 15 minutes.
7. Decorate the roll with cherry tomatoes and various fresh herbs. Served with rice, puree or even a salad of mixed leaves and lemon slices.
