INGREDIENTS
- 2 duck breasts
- 1 kg salt
- 1 pinch of pepper
- 1/2 orange
- 300 g. water
- 300 gr. sweet potato, cubed 2.5-3 cm.
- 200 g. broccoli, in florets
- 200 g. orange juice
- 1 kg. orange zest
- 100 gr. dark chocolate 55-60% cocoa, in small pieces
- 1 pinch of cayenne pepper or according to your preferences
- 1 pinch of salt
- 20 g. brown sugar
- 2 tbsp. olive oil, for frying

EXECUTION
Step 1
Salt and pepper 2 duck breasts with 1 tsp. salt, 1 pinch of pepper, rub with 1/2 orange and set aside in a bowl.
Step 2
Put in the bucket 300 gr. water, place the duck breasts in the Varoma deep tray and cook 15 minutes/Varoma/speed 2.
Step 3
Place 300g. sweet potato, in 2-3 cm cubes, 200 g. Broccoli, florets, on the unpainted Varoma tray, place in place and set 15 minutes/Varoma/speed 2.
Step 4
Remove the Varoma and empty the water from the tank. Put in the bucket 200 gr. orange juice, 1 teaspoon of orange zest, 100 g. dark chocolate in pieces, 1 pinch of pepper cayenne or depending on your preferences, 1 pinch of salt, 20 g. brown sugar and set 3 min/75ËšC/speed 2.5. Transfer the chocolate sauce to a bowl and set aside.
Step 5
Heat 2 tablespoons olive oil in a non-stick pan over medium heat and brown the breasts. about 3 minutes on each side. Cover the duck breasts for 2-3 minutes, slice and serve with the vegetables and chocolate sauce
