Yummy raisin pie. Recipe by Thekla Hatzidiakou
MATERIALS
- 60 gr. brown sugar
- 1 orange, only the peel
- 1/2 lemon, only the peel, without the white part
- 60 g. brown sugar
- 100 g. sunflower oil, and a little more for the oiling
- 2 kg. cinnamon, ground
- 2 pinches cloves
- 1 tsp. baking soda
- 200 g. orange juice
- 115 g. cinnamon tea (boiled with a cinnamon stick)
- 190 g. raisins
- 20 g. cognac or rum
- 200 g. walnuts
- 500 g. flour, for all purposes
- 2 kg. baking powder

EXECUTION
Step 1
Preheat the oven to 180°C. Grease a 24cm round tin and set aside. Put in the bucket 60 gr. brown sugar, orange peel, 1/2 lemon peel and mix 10 seconds/speed 10.
Step 2
Add 60g. brown sugar, 100 g. sunflower oil, 2 teaspoons of cinnamon, 2 pinches of cloves and mix for 30 seconds/speed 4.
Step 3
Add 1 teaspoon of soda, 200 g. orange juice, 115 g. cinnamon tea, 20 g. cognac, 190 gr. raisins, 200 g. walnuts, 500 g. flour, 2 teaspoons baking powder and mix, with the help of the spatula, 10 seconds/speed 5.
Step 4
Transfer the mixture to the round mold that you prepared and bake for about 40 minutes (180°C).
