A festive dish that for years now has a place in the festive kitchen. Delicious and juicy, soft meat that leaves our palate a surprise of flavors. The classic package of gammon that we usually find in supermarkets is around 1-2 kilos and is usually already soaked in water to get rid of its intense saltiness.

Baking time: 2 hours (or depending on the weight of the gammon)
Calories: 130 per 100 gr.
For 6 – 8 servings
A piece of GAMON GRIGORIOU around 1.3 kg
1 liter of water
1 tablespoon peppercorns
Or orange cut into pieces
1 teaspoon cinnamon
For the orange sauce
Or glass of orange jam
4 tablespoons English mustard
1 teaspoon chili powder
1 teaspoon salt
1. In a saucepan that goes into the oven, put the gammon and pour the water over it, add the pepper seeds, the orange pieces and the cinnamon. Put the pot on the fire and let the water boil. Lower the heat and cover the pot with its lid. Simmer for 1 hour and 20΄ (calculate that 1 hour of baking is required for each kilo of gammon).
2. Let the gammon cool a bit in the pot. With large forceps we remove it from the water and put it on a board. We throw away the water. Remove the net and carve the top of the game into diamonds, using a good knife.
3. In a bowl, mix the jam with the mustard, chili powder and cinnamon. Then, lay the base of the compatible pot with aluminum foil, place the gamun in the pot. Spread it with the mixture of jam and mustard where we cut it and bake in a preheated oven in the air, at 180 ° C degrees for 20-25 minutes. If we are going to serve it hot, let it stand covered for 5 minutes. It is very tasty and cold, cut into thin slices with chutney and cheese!
