The Commission announced today that it has approved the application for the registration of “Sausage Pitsilias” and “Lountza Pitsilias” of Cyprus in the Register of Protected Geographical Indications.
According to the Commission, “Pitsilias Sausage is a pork product, aged, smoked and marinated in wine, from the Pitsilia area.
“Lountza Pitsilias is a refined product made from dried meat, brine, smoked and marinated in wine, made from pork fillet”, he records.
“Salt, marinating in wine, adding spices and fermenting meat are important steps in the cooking process to ensure that the sausages are made from the same mixture and have the same quality characteristics,” he notes.
“The production know-how has remained unchanged and has been passed down from generation to generation. It is still used in the modern facilities of the producers in the Pitsilia area,” the commission said.
