Skordalia with potatoes

MATERIALS

  • 500 gr. water
  • 700 gr. peeled potatoes, in
  • cubes
  • 2-3 cloves of garlic
  • 70 g. olive oil
  • 30 g. vinegar
  • 20 g. lemon juice
  • 1/2 tsp. salt

EXECUTION

Step 1

Put 500 gr. water. Place the basket in place and weigh in 700 g. potatoes peeled, diced and steamed 30 minutes/Varoma/speed 1.

Step 2

Remove the basket with the help of the spatula, leave potatoes aside and empty the bin. Put 2-3 cloves of garlic, 20 gr. olive oil and beat 7 seconds/speed 7.

Step 3

Clean the sides of the bowl with the spatula and beat another 7 seconds/speed 7.< /p>

Step 4

Place the whisk in place, add the  cooked potatoes, 30g. vinegar, 50 gr. olive oil, 20 g.  lemon juice, 1/2 tsp salt and mix 30 sec/speed 3.5. Transfer to a bowl and serve.
