MATERIALS

2 tbsp. olive oil
Or red onion, finely chopped
1 tablespoon fresh ginger, grated
¼ κ.γ. garlic, melted
3 sweet potatoes, peeled and cut into cubes
1 liter of water
1 tbsp. mild curry powder
1 cube of vegetable broth
Salt Pepper
½ canned packaging (200 g) of coconut milk
For serving
Fresh thyme
Strained yogurt
Toasted bread

IMPLEMENTATION

1. Heat the olive oil in a large saucepan over high heat. Add the onion, ginger, garlic and sweet potatoes and cook until soft, about 15 minutes.
2. Add water, broth, curry and season with salt and pepper generously. Bring the mixture to a boil over high heat, then lower the heat. Cover and simmer for 15-20 minutes until the sweet potatoes are soft.
3. Stir in the coconut milk, cook for 5 minutes. Mash the soup with a hand blender. Serve with a little yogurt, thyme and a little boukovo. Serve with toast.
