Tomato soup with spices

MATERIALS

80 gr. onion, cut in half

1 clove of garlic

200 g. potato, in pieces

20 g. butter

700 g. ripe, fresh tomatoes, cut into 4

10 sprigs mixed aromatic herbs (oregano, basil, mint, rosemary, thyme, etc.) (only the leaves)

1 kg. dried mixed aromatic herbs

1 kg. homemade vegetable stock paste

400 g. water

1 kg. salt

1 pinch of pepper

50 g. feta, in small cubes, for garnish (optional

EXECUTION

Step 1

Put in the bin 80g onion, cut in half, 1 clove of garlic,  200g potato, in pieces,&nbsp ; 20 g butter and cut 5 seconds/speed

Step 2

Then saute 5 minutes/120°C/speed .

Step 3

Add 700g ripe fresh tomatoes, quartered, leaves from 10 sprigs mixed herbs, 1 tsp dried mixed herbs, 1 tsp paste vegetable stock and chop 10 seconds/speed 7.

Step 4

Add 400g water, 1 teaspoon salt, 1 pinch of pepper and cook 15 minutes /100°C/speed 1.

Step 5

Then puree 1 minute/speed 5-10 gradually increasing the speed Transfer to a soup bowl and garnish with 50g of feta in small cubes before serving.
