We will need a pan with a removable base with a diameter of 20 cm.

MATERIALS:

For 8 servings:
For the base:
150 gr. Digestive cookies
55 gr. unsalted butter, cut into pieces

For the filling:
500 gr. cream cheese
220 gr. granulated sugar
1 tablespoon corn flour
4 eggs
150 gr. sour cream
250 gr. white chocolate couverture, cut into very small pieces

EXECUTION:

1. First make the base of the cheesecake. Put the cookies and butter in the bucket of the mixer. Grind to combine our ingredients and press the mixture into the base of our pan.
2. Add the cream cheese, sugar, corn flour, eggs and sour cream to the food processor. Beat until the ingredients are combined. We stop the beating.
3. Carefully melt our chocolate in a small saucepan, stirring constantly with a silicone spatula over low heat. Pour the melted chocolate into the food processor with the cheese mixture and beat for another 1 minute.
Transfer the mixture to the base of the cookie and preheat the oven to 160 ° C. Bake the cheesecake for 1 hour or until our mixture is cooked. When we take it out of the oven, it may look a little uncooked (it is the chocolate that is still melted).
4. Leave the cheesecake to cool and put it in the fridge for 4 hours to freeze before taking it out of the pan to serve.
