Date pie with dark chocolate glaze

  • 400 gr. pitted dates cut into oblong pieces
  • 325 g. warm water
  • 1 kg. baking soda
  • 200 gr. walnuts
  • 170 g. sugar
  • 140 g. oil seed oil
  • 4 eggs
  • 2 kg. cinnamon, ground
  • 25 g. rum or cognac
  • 255 gr. all-purpose flour
  • 15 gr. bacon powder
  • 1 pinch of salt

Syrup < /p>

  • 300 gr. sugar
  • 350 g. water
  • 20 gr. lemon juice
  • 1/2 lemon only the peel preferably organic
  • 1 cinnamon stick
  • Icing
  • < li data-block-key="83fk8">200 gr. dark chocolate, in pieces

  • 1 kg. honey
  • 100 gr. sour cream

Step 1 < /p>

Butter and flour a springform pan (Ø 24-26cm) and set aside. Place a large container on the lid of the bin and weigh in 400g. dates and set aside. In a bowl put 325 gr. hot water and dissolve in it 1 teaspoon of baking soda and pour into the dish with the dates to cover, soften and set aside.

Step 2

Put 200 gr. walnuts and grind 4 seconds/speed 5. Transfer to a bowl and set aside.

Step 3

Put the 170 gr. sugar, 140 g. seed oil and mix 1 min/speed 5.

Step 4

Add the 4 egg yolks and mix 3 minutes/speed 5. Meanwhile, preheat the oven to 170°C.

Step 5

Add 2 teaspoons cinnamon, powdered, 25 gr. rum or cognac, the dates with the water you left aside, the walnuts you left aside, 255g. flour, 15 g. baking powder and mix 20 seconds/speed 4.5. Transfer to a bowl. Wash and dry the bin thoroughly.

Step 6

Place the beater in place. Put 4 egg whites, 1 pinch of salt into the bowl and beat 4 minutes/speed 3.5 or until it reaches the desired thickness. 4m 3.5

Step 7

Four the beaten egg whites into the egg mixture of dates and mix lightly with the spatula to homogenize the mixture. Transfer the mixture to the mold you prepared and bake for 40 minutes (180°C). Turn out onto a wire rack and let cool for about 40 minutes. Meanwhile make the syrup.


Step 1 < /p>

Put in the bucket 300 gr. sugar, 350 g. water, 20 gr. lemon juice, lemon peel, cinnamon stick and boil 20 minutes /100°C/speed 2.5. Transfer to a bowl and set aside until the cake has cooled as well. Pour the syrup over the cake and set aside to absorb. Meanwhile make the chocolate frosting.


Step 1 < /p>

Put in the bucket 200 gr. chocolate, in pieces and grind 7 seconds/speed 10.

Step 2

Add 1 spoon of honey, 100 gr. cream and melt 7 minutes /70°C/speed 3. Transfer to a bowl and set aside for 5 minutes to cool. Pour the chocolate glaze over the cake and serve
